French Fries

My kids love Mcdonalds, but usually leave most of it, plus I know that the fries are drowned in oil before they reach me - not the healthiest thing to fed the two most important people in my life. But thanks to the committed foody called Cory who runs a website called ZestyCook, there is hope for them after all!

You Will Need


  • 5 Large Roasting Potatoes
  • 2 Tbsp. Olive Oil
  • Salt and Pepper to Taste
Preheat your oven to 400 degrees (about 200 degrees centigrade/gas mark 6 - remember if you have a fan oven to set it a little lower)

I have seen several comment from people who say that the fries are nicer with the skin left on, but whether you peel them or not is up to you (but do wash them either way)

Cut the potatoes up in the French fries, ensuring that they are all roughly the same size, or they wont all cook the same. Then place them in a bowl of water for about 30 minutes. This releases the starch and gives you crispier fries. After the 30 minutes you need to dry them on some kitchen roll, this is also important to give you a nice crispy finish; if you don't do this then the moisture will make them steam in the oven.

Put the potatoes on some baking paper and season them with salt and pepper (I like to use salt and garlic myself) Brush some olive oil over them (or you could use a low calorie spray such as Fry Light) and put them in the oven for about 45 minutes (if you see that they have turned golden before the 45 minutes is up that means they are ready)
